Socialists have a problem defining the working class because Socialists have never worked for a living. If you've never been a worker you cannot know what workers do or what workers are.
As a general rule Socialists were spoiled brats who grew up to be malcontents and bums. Marx himself was a malcontent and a bum who never worked for a living. Some Socialists were born to parents rich enough to support them for life, and some just became bums living off the largess of others, but few if any of them ever made their own way in life.
The rich Socialists are exceptions to the general rule. Rich men become Socialists when they learn that Socialism aims at eventual dictatorial one party rule over nations, and eventually over the world.
Millionaire, billionaire and oligarch Socialists became Socialists to attain, gain or share in Socialist dictatorial political power, and to help support Socialist bums as allies in the Socialist cause. They buy their way into the "politburo" ruling class of Socialist Parties, which are or eventually become the main launch pads of Socialist dictators.
Anti-American Islamo-Commie-Homo champion New York Mayor Zohran Mamdani recently stumbled in an interview when he was asked to define the working class. He couldn't do it.
"People who have to work to pay their bills"
he said and then tried to change the subject.
He didn't even know that he had just described nearly everyone in America.
Socialists don't know that landlords have to work to pay their bills.
Or that restauranteurs have to work to pay their bills.
Or that shopkeepers of all kinds have to work to pay their bills.
Or that farmers and ranchers have to work to pay their bills.
Or that builders like Trump have to work to pay their bills.
The reason Socialists don't know that is that Socialists have never had to work to pay their bills.
Socialists are just a bunch of malcontents and bums.

In Marx's original works, "workers" were proletarians. A city-dwelling class of wage earners, such as factory workers. But they were honest workers, even through they were limited only to cities.
Do note that this did not include the peasants, who were considered "owners of the means" of production and so, just another form of petit bourgeoisie in practice for Marx himself - who also despised them for being "uneducated" and lacking "class consciousness". Lenin had to reform this and say that peasants were cognate to proletarians instead to obtain support for his October Revolution.
But that reformation did not impact the universal Marxist disdain for peasantry - hence, Marxist exterminations of peasantry in every Marxist regime.
Also, in Marxism-Leninism, criminals (including prostitutes, bums, beggars, conmen and so forth) were considered "socially-adjacent" to the proletariat - they were called "lumpenproletariat". However, only those later Socialist theories made lumpenproletariat into a "marginalized" economic class.
Marx himself considered the lumpenproletariat to be actually very dangerous to "worker organization efforts" - he wrote that criminals would act as tools of reactionary, oppressive states thanks to being poor and lacking class consciousness, making them easily bribeable or coercable by oppressive states. Basically, Marx himself called them for being good for nothing except being the jackbooted thugs that would oppress actual workers - he predicted the actual Communist state dynamics with this. As such, I love this irony - a true lumpenproletarian himself, Marx inadvertedly spoke the truth about himself and all that are like him. Criminals, bums, prostitutes and swindlers that are dangerous to actual honest workers of the world!

All those peasants who worked to pay their bills always turned out to be the greatest problem Socialism ever had. In Russia they were the independent minded Kulaks that always wound up being marked for extermination. After Lenin's so-called revolution there were many years of what Robert Conquest called "War-Communism" in which the farmers who would not give up their land were killed off, in a history that included the de-Kulak-ization of Ukraine, the Holodomor, in which fully one quarter of the population of Ukraine was purposely starved to death by the Communists.
Ukraine had been the bread basket of the whole geographic area.
Being "uneducated" and lacking "class consciousness" meant, in a nutshell, not indoctrinated enough and not Socialist enough yet. Those who needed to either get their mind right or be eliminated.
And in the end of it all the final truth was revealed, in that there was no worker's paradise as advertised by Communism, but only ongoing Socialism under the brutal enforcement of brutal dictatorship.
Simple dictatorship is and always was the real goal of Socialism.

Lacking "class consciousness" wasn't even a question of education - Communists understood that peasants, accustomed to working for themselves, thus had a fundamental resistance to the envy that was the basis of the Marxist ideology's appeal. The peasants were almost always fiercely nationalistic - because, unlike the industrialized cities (which tend to produce/attract way more alienated people and criminals, which are susceptible to Marxism), peasants had communities and extended families always close by. A peasant was less likely to turn on his community because he had an attachment to it and understood what it is. A peasant was never alienated - no Turanian ideology could make a roving bandit out of him.
